Like all of our Brewery Collaboration Series whiskies, this spirit started off as a great batch of actual beer at the brewery. Which we then took, distilled, and aged into an actual whiskey.
This particular whiskey was born as a delicious imperial stout brewed by our friends at Side Project Brewery. We took that actual beer double-distilled it and aged it in new oak barrels for over 2 years to create a single malt whiskey showcasing decadent notes of caramel and roasted cacao. You’re welcome.
Tasting Notes:
Nose: Warm cereal grain with undertones of cooler beer yeast.
Palate: Rich and creamy barley, caramelized cereal, and hints of spice berries on the finish.

We’re searching for incredible mash bills for single malt, wheat whiskey, brandy, tequila, smoked whiskey, barrel-aged gin, bourbon, rum, etc. We experiment and then you decide what becomes the next great StilL 630 spirit.
