This company continues to be my driving focus and life's passion. I've poured my soul into it over the last five years and literally built it from nothing. It's been an incredible ride and I've been lucky enough to get help from all over and at crucial times. I've had some great summer interns and a couple guys who helped distribute along the way. But as 2017 dawned, I found myself again StilL 630's sole employee.
Which makes me super excited to announce two pretty incredible individuals who are bringing their special talents to our team. First, is my incredibly lovely wife: Sidni, who is taking over our book-keeping and is now our "V.P. of Miscellaneous Stuff". She's going to take over the office side of the business so I can focus on production.
From the very beginning, it's been our dream for her to come aboard officially and it's extremely exciting that it's finally happened! (and yes, for those wondering what this really means: it means I just gave myself a boss...) She's intelligent, organized, with a great attitude and has impeccable taste in men. Plus, I know she's as committed to the company's success as I am.
Secondly, but with complete enthusiasm, I'd like to introduce Andrew Spaugh, whose business card now describes him as the Master of Sales & Distribution. Not to mention our resident mixologist, labeler, and current owner of the best beard at StilL 630! He's a great guy with an incredible passion for whiskey and he's long been a close friend of the distillery.
I'm very excited for these two to help me take the distillery to new heights. It really feels like we're building a rock solid team with dynamic, passionate individuals who have enormous work ethics and share a unified vision for incredible quality. Welcome aboard Sidni & Andrew!! We are going to do great things together.

JAMES BEARD WINNER GERARD CRAFT COLLABORATES WITH STILL 630 TO RELEASE ‘THE TRUTH’ WHISKEY
- LOUIS (April 25, 2017) –James Beard winner Gerard Craft and his team at Taste Bar announce a collaboration with StilL 630 to launch The Truth, the first ever American Single Malt Whiskey from the local distiller. The culinary and bar teams at Taste will launch the new spirit on Monday, May 1 at Taste (4584 Laclede St., St. Louis, MO 63108) at 5 p.m. with specialty cocktails and 4-5 dishes paired specifically for the whiskey, available for one night only.
StilL 630 owner David Weglarz worked with Chef Craft and GM/Beverage Director of Sardella/Pastaria Chris Kelling to create the tiny batch, single malt barley whiskey. He explains, “I originally developed the spirit in very small test batches, and I loved it so I wanted its release to be special. I’ve always been a fan of Gerard and his restaurants so I knew he had the palate to make it truly great. I worked with his team to really capture the perfect flavor profile, and we dialed the proof up to a stout 110 to capture the full body of the whiskey.”
The result is a whiskey made from 100% single malt barley, a portion of which is smoked. The natural smoky flavor in the whiskey complements the non-peated, American-style single malt. Although the whiskey has already won a Bronze Medal from the 2017 American Craft Spirit Awards, this will be the first official launch of the spirit.
Chef Craft elaborates, “David is really leading the artisan craft of distilling here in St. Louis, and I think he’s extremely talented. ‘The Truth’ is an important mantra for our restaurant group. It’s our dedication to honest cooking and creating the best possible product. We share that commitment to care with David. When he approached us to get behind this project, I knew the end result was something that I would stand behind. Plus, there’s nothing greater than a whiskey cocktail as a reward after a long day in the kitchen.”
With the small batch production, there are only 87 bottles total in existence. The spirit will be sold at Niche Food Group restaurants as well as the distillery for $65. Bottles will also be available for purchase on launch night.

Aug 10, 2017 - FIVE YEAR RALLYPOINT
We are releasing one of the most special bottles of whiskey ever! The culmination of six long hard years of blood, sweat, and tears. As we've built this company into the multi-award-winning, nationally acclaimed distillery, this special barrel has been quietly aging.
Now, on Sept 16th, 2017, it turns FIVE YEARS old! This will be the FIRST ever Five Year old whiskey made and aged in the state of Missouri! Come out to the distillery at 10am on Sept 16th to be the first to taste and buy this incredible spirit. Extremely limited number of bottles are available and they are all engraved for this special release!
This un-cut, un-filtered bottle of barrel strength straight rye whiskey clocks in at 126.2 proof, and the flavors are incredible. Each bottle is hand engraved, number, and signed. Come get yours before it sells out! First available at 10am, Sept 16th, 2017 in the distillery tasting room!

Rejoice! Our multi-Gold Medal winning RallyPoint Maple Sunset is coming back soon! This is the fourth batch of one of our most-adored spirits. It's rye whiskey with bourbon and maple syrup notes on the back end. We use an actual barrel that originally held 4Roses bourbon, then The Wine & Cheese Place (great local liquor store) used that empty barrel to age their maple syrup. After they bottled their bourbon-barrel-aged-maple syrup, they gave the barrel to us. And we filled it with RallyPoint Rye Whiskey and let it sit for 10 months as it slowly picked up those beautiful flavors.
Come out on the First Friday of October for our Experimental Spirits release: X-4 (Apple Brandy made from 100% fresh squeezed apple juice from a local orchard!) and as an added bonus you will enjoy the release of Batch IV of RallyPoint Maple Sunset at the same time! For the 4th quarter, we are pairing our bigger releases (Maple Sunset, Bourbon, Double Barrel) with the experimental releases to give you a special holiday treat. Nov 1, 2017 - BOURBON IS BACK!
YES. Very much yes. And we're very excited to release our very first batch of bourbon: MONON BELL BOURBON on Nov 12th! For sale in the distillery on Sunday Nov 13th. The Monon Bell is an actual 300lb train bell that used to run on the Monon line between Greencastle, IN (DePauw University) and Crawfordsville, IN (Wabash College), when it was retired, it was donated to become the trophy for the victor in the annual battle between the two ancient rivals. It is one of the oldest and most storied rivalries in the United States, though it's small nature keep it relatively unknown outside the diehard alumnus groups. But every fall, in the last game of the year, the Little Giants of Wabash and the Tigers of DePauw square off in an epic battle for pride, for their schools, for the Monon Bell.
Our inaugural bourbon is named after that great game and is a tribute to the Indomitable Spirit at the heart of the rivalry. It's a high rye bourbon with a tremendous buttery nose and this edition commemorates the 123rd Monon Classic which will take place in Crawfordsville, IN on Nov 12th, 2017. The distillery release will occur the following day on Nov 13th in the distillery starting at 10am!
