1 oz. Volstead's Folly American Gin
1/2 oz. Beet and Lemon Thyme simple syrup
(Drain a can of beets, add to a sauce pan with a cup of sugar, a cup of water and 3 sprigs of lemon thyme. Bring to a boil and strain)
3 oz. Tarragon infused Apple Juice
(Simmer 1/2 gallon of apple juice with 2 tablespoons of dried tarragon)
Mix in a rocks glass with ice and a squeeze of lemon.
